The Mondrian Hotel West Hollywood has a plan for how you can say goodbye to the summer: drink a Goodnight Kiss cocktail at their Skybar. The Mondrian's really been getting into the summer cocktail theme this season and the Goodnight Kiss is its third special creation.

The Bacara Resort's Acai Berry Drink

Acai berries seem to rate a lot of mentions in the junk mail that passes our desk – you know, the Brazilian superfood from the rainforest which is supposed to be healthier than, like, a whole field of spinach – but we've learned today that not all acai berries are annoying.
In the Bacara Bar at the Bacara Resort and Spa in Santa Barbara, they're serving up a Bacara Acai cocktail and rather than sounding much too healthy, it actually sounds rather delicious. It features Veev Acai Spirit and Chambord Raspberry Liqueur, and very importantly, eleven blueberries – not ten and not twelve, so get it right if you try to mix it at home! The Hilton Sedona's Prickly Pear Magarita

Summer is sadly winding down and this weekend is probably your last weekend to indulge in Summer Cocktails at hotels. But while folks at the Jersey Shore and The Hamptons will be mourning this unofficial end of Summer, we prefer to mark the passing of summer by the Autumnal equinox which means we have about three more weeks left to down some drinks.
At the Hilton Sedona in Arizona, they've been celebrating the desert heat with their Prickly Pear Margarita. The drink can be (probably should be) enjoyed poolside where you can admire the famous Red Rock formations of Sedona. The drink usually costs $10.37 but sometimes the hotel makes it their special Drink of the Day for $6.75 so you can splurge for a few.
Just make sure you don't drink and drive the Red Rock Scenic Byway. Save your margs for after the road trip. Room rates here begin at $189 a night.

The Biltmore's Historical Tequila Sunrise

The last news we heard from the Arizona Biltmore was about the not-in-a-hurry renovations (dates like "sometime before 2020" were getting tossed around) so we're happy to have something more concrete to report: the Biltmore's got a special summer cocktail, and it's a classic.
Something we didn't know is that the Tequila Sunrise was apparently invented at the Biltmore, back in the 1940s when a frequent guest asked the bartender to make him up a refreshing drink to sip by the pool. So to help celebrate the Biltmore's 80th anniversary this year, they've brought their classic cocktail back to life for the summer. Of course, the price is a little more than that first guest paid back in the 1940s – these days you can get a Biltmore Original Tequila Sunrise for $14.

The Ultimate Swiss Drink: Baur Au Lac's Swisstini

Zurich's fancy Baur Au Lac has just got its $50m renovations done, and has decided to celebrate with a special end-of-summer cocktail called the Swisstini.
This is one delicious-sounding drink which mixes crème de framboise and raspberry puree with vodka – and has a fantastic Swiss touch by using pieces of white chocolate (Swiss, of course) to make the Swiss flag on top. You can get it for 18 Swiss francs (about $16) at the Terrasse rooftop bar, which means you sip away while looking over Lake Zurich.
The folks at Baur Au Lac are generous enough to suggest recreating the cocktail in your own home if you can't make it all the way to Zurich, or can't afford the starting-at-$750 room rates, but we think it won't taste quite the same outside Switzerland.

Jumeirah Essex House Celebrates The U.S. Open With The Honey Deuce

With the U.S. Open coming up, the fine peeps at Jumeirah Essex House on Central Park have got a consolation prize for all of us who won't make it courtside: we can enjoy the official U.S. Open Cocktail instead (who knew a sporting event had an official cocktail? We hope the players get one after every match).
Anyway, this official cocktail is the Honey Deuce, featuring Grey Goose vodka and Chambord, and of course some melon balls which definitely get us thinking about tennis, at least if we use our imagination. Essex House will be offering this cocktail in its South Gate restaurant from today through to the end of the U.S. Open on September 13.

Liberty Hotel Adds Healthy Drinks To Our Summer Cocktail List

Boston's Liberty Hotel has got our summer cocktail indulgence all sorted out: they have a range of "Sleek" cocktails which each have less than 150 calories, which means, of course, we can drink a few more of them without having to worry about how we'll look at the pool. And for this we are truly grateful.
In fact, Liberty Hotel bartenders tell us that pretty much every classic cocktail can be transformed into a more body-conscious version, and their "Sleek" versions certainly still sound like they have a great taste. From the Malibu Lift (including reduced-fat, no-sugar-added dried coconut) to the Hydrate (includes lots of watermelon) and the Dream (no nasty fat-free ingredients, but just sounds delicious), everybody should find something to indulge in without the same guilt as a regular cocktail. Silverleaf Gin & Tonic A Bit Special at 70 Park Ave

Down at 70 Park Avenue they're getting into the swing of our love for summer cocktails with something a bit special: the Silverleaf Gin & Tonic which is a bit unique because it's infused with basil and mint that are grown in the hotel's own rooftop garden. And we think that's pretty neat.
For $16 you can sit back in the Silverleaf Tavern with your exclusive gin and tonic and muse on how the other half live. You could also stay for dinner after, but don't forget they don't serve dinner on Sundays. And we really think it's worth heading to 70 Park Ave for this cocktail because making it yourself with all that infusing business will take half the day.

The Desert Springs Marriott's Raspberry Kiss

So you're kicking back in the lobby bar at the Desert Springs JW Marriott Resort in Palm Desert but you get the feeling there's something missing. It might be a loved one to give you a kiss … or failing that, get a cocktail kiss. They've got the Raspberry Kiss cocktail on offer this summer and it sounds refreshing enough to make you forget all your city woes.
With a mix of Bacardi Limon and the delicious raspberry tang of Chambord, plus plenty of mint to keep the refreshment value up, it gets our thumbs up, and has the bonus of being very reasonably priced – just $11, so you'll have enough change to down a couple (or more, if you're more desperate for refreshment). But just to get things in the right order we recommend hitting the spa before the bar, because tipsy tub therapy can be a bit dangerous.

Order Up Some Class, Pure Class, at The Water Club at The Borgata

Yesterday we told you how the Borgata would let you cash in on your clubbin' habits but there's something a little more refined going on at the hotel's sister property, The Water Club.
Inside the hotel's lobby lounge is The Sunroom, a sun-filled space (hence the name) where water cascades down the curved, 50-foot linear blue stone wall into a reflective pool. We know! It's so classy for AC.
Speaking of class, while you're gossiping about the Real Housewives of New Jersey or whether or not you got the latest Bon Jovi or Springsteen tickets, why don't you order yourself some Pure Class? That's a drink made with vodka, fresh stawberries, fresh lemon juice, rock candy syrup and some perrier jouet champagne.
The drink is available in the Sunroom for $14, along with other fresh fruit concoctions (for $12) like the Basil Berry (made with gin), the Blue Berry (made with absolut ruby red and blueberries) and the Banana Cafejito (made with malibu banana and kahlua mocha) but you can make it yourself at home. It's the perfect drink to sip during those RHONJ marathons!
Just don't flip the table after you've had too many. Not classy at all.

The Planters Inn's Endless Summer

This drink is the kind of drink that makes us wanna head to Charleston and the spend the afternoon just soaking up the Southern sunshine and hospitality. The Endless Summer is served at the Peninsula Grill at the Planters Inn, a luxury boutique hotel (only 64 rooms!) set within a restored historic building in the middle of Charleston.
The Endless Summer is mostly sweet (as it should be), made with Bacardi Silver, watermelon juice, lemon juice and a little bit of sprite. And it's only $10. So you could almost make this an endless drink as well. (Not that we here at HotelChatter advocate binge-drinking or anything!) Once you've had your fill at the Peninsula Grill (named “Charleston’s Best Restaurant” nine years in a row) get a room at the hotel. Summer specials start at $199 this summer for a superior queen room.
