Singapore-based GHM hotels oversees some pretty cool properties (the elephant-themed Chedi Club outside of Ubud, Bali is a particular favorite), and The Setai has long been considered the brand's flagship. It's a serene, Asian-inspired sanctuary amid the hub-bub of Miami's South Beach. (Side note: Did you know the word "Setai" is actually a made-up combo of the Balinese words for "south" and "beach", or SoBe? It's the Brangelina of hotel names...)
So as fans, it was with some trepidation we took the news that The Setai had left the GHM roster for the management of Dallas-based Trevi Luxury Hospitality Group. (Especially given the way it all went down.) With all the hotel buzz in Miami—including the arrival of instant-hotspot The James—was The Setai looking to pump up the volume? Were DJs going to appear in its mellow courtyard—or worse, would it make like its neighbors and start charging for beach chairs?

What better reason is there to spring for the absinthe on a hotel restaurant's menu than the fact that it's Friday? None, we say. None. At least, that was our reason when earlier today we popped into Ai Fiori, the restaurant of the newly opened Setai Fifth Avenue, for their $24.07 three-course Restaurant Week menu.
With no idea of what to expect, other than some good Italian Riviera-influence cuisine from Michelin-starred Chef Michael White, we found a bustling restaurant (must've been all our Restaurant Week compadres), a nice second-story perch above Fifth Avenue, and a ginormous wine list...which included two entries for absinthe. The first, Pernod Paris, was not as highly recommended by the sommelier (Steven, who is awesome) as was the $19 St. George Absinthe Verte, a California creation. It does have wormwood, for those wondering, as we were.
The beach's most sophisticated hotel is marking its fifth anniversary this year, and has lots of posh packages on tap so guests can join in the celebrations.
Chocolate truffles and Taittinger champagne are nice and all, but what really gets our motors runnin' (heh) is the A La Carte Menu of Luxury Car Rentals available as add-on amenities for guests who book one of these three packages...

So here we are, still obsessing over the next hotels to open in New York—like The Chatwal, The Nolitan, and W New York Downtown—and we almost forgot about others that were scheduled for a little further down the road.
But unlike some of those hotels that have been promising us all sorts of Spring surprises with very little to show for it, The Setai Fifth Avenue is revealing loads of valuable intel—six months away from opening on November 1st. That's right, we've got an opening date, a website, room renderings, and—bless their luxurious efficiency—room rates!
We know! What did we do to deserve this? Well, since it is a Setai—managed by ultra-fancy Capella Hotels—those room rates are pretty high, so let's not get carried away. The online reservation system tells us that a Standard room on opening day, November 1st, is a hefty $545 a night. Avenue Apartment Suites are $2,395 a night, and the Penthouse Apartments... well, they're the "if you have to ask, you can't afford it" kind of expensive.
