StripSteak Vegas Gives Us a Taste of StripSteak Miami, Opening at The Fontainebleau

Miami and Las Vegas have become sister cities of a sort. Both are well-known for their robust hotel scenes, their penchant for partying, their "less is more" credo when it comes to clothing and their general love of excess.

More recently, we've been seeing an influx of South Beach in Sin City, thanks to the opening of the SLS Las Vegas and the Delano Las Vegas. But now, Vegas is sending off something to Miami--Michael Mina's StripSteak restaurant.

Stripsteak can be found in Vegas at Mandalay Bay, where the Delano Las Vegas also lives, but Mina plans on spinning off StripSteak Miami at The Fontainebleau sometime this fall. Mina already operates the Michael Mina 74 restaurant at the resort so he's already familiar with the property. StripSteak will replace Gotham Steak restaurant. We'll keep you updated on the opening date. In the meantime, peruse the StripSteak Vegas menu for a hint of what's to come. We'll take the 10oz filet mignon, the truffle mac n' cheese and one, make that two, orders of the potato gratin please.

Michael Mina At The Borgata: Roaming to Four Seasons in Wyoming

We had the pleasure of being invited to the recent Savor Borgata Event in Atlantic City where chefs Bobby Flay, Wolfgang Puck, Michael Mina, Geoffrey Zakarian and others were there presenting food demos and a huge culinary showcase for a crowd we were delighted to see come out in droves to support the city just a week after Hurricane Sandy hit.

We were lucky enough to spend a few minutes interviewing some of the chefs. We talked about some of their holiday plans, and more importantly what’s on their hotel horizon.

Today we recount our talk with superstar, but super humble Michael Mina, who not only has the Seablue restaurant at the Borgata, but has just opened a new bar and grill at the Four Seasons Resort in Jackson Hole, Wyoming.

HotelChatter: We've followed you through LA and are in love with your restaurants across the country, where will you be branching out to now?
Michael Mina: Well, I just opened three restaurants in Baltimore at the Four Seasons, and on December 14th, we'll be opening at the Four Seasons in Jackson Hole. That's going to be called Handle Bar. It's going to be a bar and pub, serving burgers, sausages, chili--lots of great food.

HC: Elk sausage? Is that something you've worked with before? How did you research the ingredients for your new menu?
MM: The concept is a natural fit for the environment. It's a bar, and it's a pub. We're just trying to elevate the quality of fun bar snacks by doing a lot of fun twists on classics and using a lot of great products and cooking techniques. We'll do great plates where we actually make the cheese for the cheese sauce, for instance, taking into account our location and the challenges it brings.

Michael Mina's Bourbon Steak Moves Into The Westin St. Francis

Even for a celeb chef, Michael Mina is a busy man. He has restaurants in seven states, with the latest--his 18th--opening at The Westin St. Francis just over a week ago.

The new restaurant--which replaces Mina's eponymous resto in the same space (it has a new location elsewhere)--is Bourbon Steak, which his fans may already know from Scottsdale, Miami, Washington D.C. and Detroit.

But the James Beard-winning chef promises to give this Bourbon Steak a Californian flavor, with a menu heavy on local product and farmers. (Omri Alfalo, executive chef, is the man who'll actually be running the show in the kitchen.)

Chef Michael Mina Dishes on Stonehill Tavern at St. Regis Monarch Beach

During a stay at the St. Regis Monarch Beach resort outside Laguna Beach, we stopped by Michael Mina’s restaurant there, Stonehill Tavern, for a quick sit-down with the famous chef-impresario.

While speaking with him, we found out about the exciting new changes in store for the restaurant now that it has a new executive chef, Brian Black, who comes to Stonehill after stints at Mina’s other restaurants and then at Loft at the Montage Laguna Beach just down the road from the St. Regis.

The Stonehill Tavern at St. Regis Monarch Beach Introduces $39 Value Menu

Though much of the recent reportage about the St. Regis Monarch Beach in Dana Point has been about the popular luxury resort’s financial troubles, we found at least one bright spot, economically speaking: the new $39, three-course prix fixe menu at Michael Mina’s Stonehill Tavern restaurant.

The budget menu is available Wednesday-Sunday (every night that the restaurant itself is open), and each night features a simple, hearty main course like Wednesday’s fish and chips, Thursday’s Kobe steak frites with roasted baby carrots, Friday’s cedar-plank salmon with potatoes and bacon vinaigrette, and Saturday’s roast prime rib with twice-baked potato.

Westin St. Francis Has Its New Look Ready

In San Francisco, the famous Westin St. Francis has finished its extreme makeover, and almost on time, too. When we last checked into things, they were promising a Spring 09 finish, and they've nearly got that right. And we're pretty impressed – spending $40 million in just two years is not easy to do.

It sounds like everything we were promised has been delivered: 37" flat screen TVs and handsome dark wood furniture in the rooms, a massive lobby renovation and the new Clock Bar opposite the restaurant. There is now WiFi throughout and as promised, a snazzy new security system, and they've also spent $2 million modernizing the elevators so you'd hope at that price there's no waiting around or stair-climbing ever required.

The Westin St. Francis to Get Extreme Makeover

A couple weeks ago we wrote about the tired-looking Westin St Francis. We don't want to assume we are some kind of soothsaying project of visionaries, but let's just say we found it very interesting that the grand dame of San Francisco has just announced they are undergoing a $40 million renovation anticipated to be complete in Spring 2009.

Starting on the ground floor, the lobby renovation is headed up by none other than Jesus-for-hospitality-design, Rockwell Group. The lobby will take on a modern palette with blues and browns for the color scheme and guests will notice a cooler, more hip feel (picture hanging edison bulbs and sleek couches.)

However, the traditional aspects that made the hotel famous in the first place will still be honored such as glass and metal reproductions of the lobby's original globe chandeliers.
