So it seems the Thompson Beverly Hills has officially transitioned from a Best Western to a Thompson Hotel. But despite this, the construction is not yet complete on the hotel and the BondST restaurant has been pushed back yet once more.
Stephen Brandman told us to expect the Jonathan Morr restaurant sometime in mid-January. Oh we will, Brandman. We will wait with bated breath.
Meanwhile, the hotel has its first review under Thompson Beverly Hills on TripAdvisor. A reviewer from Chicago just posted this yesterday, titled "You pay for what you get":
I phoned the property directly to book this stay. They were slightly dishonest about the current state of the construction. When we stayed on December 16th things were still pretty rough. Think dirty, unorganized, and lacking basic services. My saying is that "you pay for what you get" We did not pay much or get much here.
The Palazzo Hotel and Casino, which is taking reservations for December, isn't avoiding the celebrity chef obsession that's infected Sin City. In fact, the resort may have the highest concentration of uber-trendy eats we've seen in awhile.
On tap for the hotel are a Mario Batali-Joe Bastianich Italian Steakhouse called Carnevino, an outpost of Jay-Z's 40/40 Club and an Emeril Lagasse spot named Table 10. Also lined up is a SushiSamba, a Dos Caminos and a branch of Wolfgang Puck's steakhouse CUT. (We loved the original in LA.)
Whether these eateries actually open at the same time as the hotel is another question entirely. Especially considering that the whole building is still under construction.
But Markj pointed out in comments that room reservations are being taken for Dec. 20th.
You can book on their website starting Dec. 20 ($199 for standard rooms). So I would say soft opening is going to happen December 20th without a doubt.
Those Vegas people don't fool around. Still we doubt the entire thing will be finished. Meanwhile, Eater LA also reports that Jonathan Morr (who will open BondST in Thompson Beverly Hills shortly) will be opening Mainland, a French-Vietnamese noodle house inside the hotel in February.

The folks over at Eater LA sat down with chef Jonathan Morr and quizzed him about his soon-to-open BondST restaurant in the also soon-to-open Thompson Beverly Hills.
While the hotel is reportedly set to open Nov. 5, Morr said that his restaurant will not officially open until after Thanksgiving. He tells Eater:
The restaurant takes up much of the main floor of the hotel and will have a second-floor lounge, booths, banquettes and a sushi bar. The decor is a combo of the NYC original with Dodd Mitchell touches (also designing the hotel); Morr describes it as "comfortable, cozy, sexy, moody."
There's a custom-designed communal table made from a 2500-year-old tree (it was already dead, relax) adjacent to the sushi bar. The food will be the same mix of Japanese-inspired and sushi as in NYC.
We've also heard that the hotel may not actually open until around Thanksgiving and judging by the massive scaffolding we saw last week, we kinda believe that. Also, the rooftop pool/bar/restaurant won't open until February 2008.
But remember, you can still book the newly renovated rooms there--you just won't have an official Thompson Hotels experience. Rooms can be booked through the Beverly Pavilion website. We found a king room for November 5th for $179 a night. This is a pretty great deal for a prime BH location, so long as you don't mind construction.
