This is not so much a bar hop as a bar marathon that runs (get it?) the entire length of Canada. If you have the stamina, so do we.
Well the journey is finally over. You’ve made it across the Canadian Rockies and the prairie plains to the rugged east coast. At the Sheraton Hotel Newfoundland's bivver Lounge in St John's, we don't know whether it’s because Halloween’s just past or because of the current chill in the air (political, and the snow we've just witnessed from our window), but bivver makes us shiver (we just couldn’t resist). And dammit, after last night's US Elections, we need a drink. We all do, and our Canadian friends are serving up right!
Clever puns aside, in actual fact "bivver" is an expression that those from Newfoundland, or “The Rock,” use that means to shiver, shake, or tremble with the cold, so if you want to stop bivvering, you only have to step inside the elegant, contemporary bivver Lounge (it is killing us to lowercase bivver, btw) to warm up with a shot of Screech, a rum-based bevvie bottled on the island. (If you’ve never been to a Screech-in, make sure you do when you’re in town. Then you, too, can be an honorary Newfoundlander – number 12 on that bucket list, are we right?)

You’re in the wind-battered east coast of Canada, in Charlottetown, PEI to be exact. The autumn weather’s chilly off of the water and you’re looking for a cozy place in which to warm up. The Great Canadian Hotel Bar Hop: Hilton Saint John's York Bistro Pub

This is not so much a bar hop as a bar marathon that runs (get it?) the entire length of Canada. If you have the stamina, so do we.
Here are three pieces of trivia regarding Saint John, New Brunswick that you can use to impress your friends: 1) it is THE first official city in Canada; 2) it is located on the Bay of Fundy, whose tides rise and fall, twice a day, a staggering four-storeys each time; and 3) it is the home of that favorite beer of many a beer-lover: Moosehead.
Directly on this city’s harbor you’ll find the Hilton Saint John with its newly-opened York Bistro Pub. Now, with Saint John being the home of Moosehead Breweries and all that, you can, of course, expect to find Moosehead Beer on the pub's drinks menu. But if you only have a brewskie, you’ll be missing out.
The pub specializes in seasonal ingredients and incorporates on-the-money drink trends in their menu -- elderflower, pomegranate, cucumber, agave syrup and the like. Their house cocktail is, not surprisingly, called “The York” and is made with vodka, Triple Sec, mango, lemon and is topped off with club soda.

Halifax, Nova Scotia is a seafaring harbor city, home to salty sailors of yore and local brew pubs, and its dark ocean waters are the final resting place of the Titanic.
It's also home to Roy’s Lounge in The Westin Nova Scotian. This classic lounge was originally called the Griffin Lounge back in 1963, when bartender Roy first started out there. Now, fifty years later, he can still be found here shaking or stirring his famous martini. And get this -- earlier this year The Westin Nova Scotian re-named the lounge after him.

Well, it had to happen. Autumn is peeking just around the corner. In certain parts of Canada, the leaves are already starting to turn. For those of you who really embrace the whole crispness-in-the-air thing, you’ll love Montreal in the fall and the W Montreal's Plateau Lounge in particular.
When you enter Plateau Lounge you feel like you’ve walked into an autumnal forest, all cozy with orange and brown hues and trunk-like wooden tables. The bar itself has red and ochre leaves pressed into its illuminated top.

To get into the fall spirit if you’re not quite there yet, try the “Milton’s Muse” cocktail made with gin, Apfelkorn, house-made lime cordial and apple juice, or the “Saraswatini” consisting of Poire William, Amaretto, pear juice and, yes, apple juice.

Even Canadians say that visiting Québec City is like visiting a quaint European metropolis, minus the long flight involved. Old Québec may be a fortified city with UNESCO World Heritage status, but the TRYP Québec Hotel PUR is most definitely of a modern vintage.
The hotel is located in the newly-hip district of Saint-Roch, formerly a warehouse-type neighborhood now filled with trendy shops, excellent cafes and restaurants, artists and artisans, students, and the professional IT crowd.

The Trump International Hotel & Tower Toronto is a splendiferous hotel, dramatically designed in black, white and grey with shots of glass throughout that make it shine.
The hotel's SUITS Lobby Lounge (yes, they really named it that) mimics this same opulence perfectly, but with an added touch of gold, gold everywhere.
This luxurious lounge attracts local financial district sophisticates in the early evening who are then replaced by hotel guests and other locals coming in for the 7:00 p.m. on shift. Regardless of the time, all lounge-lovers at SUITS enjoy the cocktail concoctions perfected by the master mixologists, who serve classic drinks made modern, or classic drinks that will always be modern.

Winnipeg, Manitoba is smack dab in the middle of Canada although its kinship lies more with the west. It’s rather isolated in terms of having another major city close by and has, therefore, nurtured a population of quirky, artsy people who share that practical get-it-done attitude that people from the plains all seem to have.
It’s no surprise, then, that the city favors serious libations. Occasionally people will expand their horizons with a fruity concoction of some sort, but classics really are the name of the game here (this is the city, after all, that is reputed to have spawned the real spy from which super-agent James Bond is modeled!).

Calgary, Alberta is Canada’s version of the wild west, where people wear cowboy boots without a hint of irony. However, this city that’s affectionately known as “cow town” has more than just beer bars scattered throughout the city.
Case in point: Raw Bar, located in the stylish Hotel Arts (formerly a Holiday Inn.) This is a moody, intimate bar with plenty of private areas for private moments. It’s warm, inviting, and has single-handedly brought a nouveau brand of cocktail culture to the city. The local clientele comes here for well-made cocktails crafted by expert mixologists, who take great pleasure in concocting fantastical creations for their appreciative fans. Hotel guests come because the bar is an appealing place to hang out – and then they discover the seasonal cocktail menu for themselves.

Well, it’s finally time to dispel the myth that British Columbia’s capital city is the place where Canadians only go to retire. The hotel bar scene in Victoria is hopping, proving that Vancouver’s little sister has come of age.
The Veneto Tapa Lounge is a swanky kind of place, located off the lobby of the Hotel Rialto. Frequented by hotel guests as well as locals, it is hip in a good way, with comfy sofas and chairs, affable bartenders, warm woods and cool chandeliers. The cocktails are originals created by the career bartenders, who are all steeped in classicist cocktail preparation techniques and history. Be sure to try the glorious Jenkins, made with gin, honey, lychee, lemon, rose water and topped off with floating rosebuds; the dangerous Red Dress, where Grappa and Campari join forces with violet liqueur and fresh orange; or the Barjonesing, with Woodford Reserve Bourbon, Cynar, apricot liqueur and a liberal dash of Hawaiian Tiki bitters. (We aren’t sure what Hawaiian Tiki bitters are either, but we are sure that we want to try some.)
