Despite the whispers of a possible sale, the Dream Downtown remains a hot place to be. Why just the other night, Kanye West was at the hotel's PH-D nightclub where he unleashed some previously unreleased tunes (so says Page Six.)
Now comes word that the hotel's shuttered Romera restaurant downstairs will be replaced with a BondSt sushi spot. Word is BondSt partner Jonathan Morr is teaming up with Republic and Studio Gaia to redesign the spot.
Well, we guess that answers our question about the sayings from neuroscientist-turned-chef Miguel Romera that were etched into the bathrooms and staircases, like "I am a doctor who cooks, and not a cook who doctors food."
Once the redesign's complete, the restaurant will then serve up its signature tasty version of Japanese fare which includes not only sushi and sashimi but also entrees such as the kabocha "gnocchi", squid ink pasta and a New York strip steak.
For the bicoastal folks who loved having a West Coast outpost of BondSt Sushi, we have some bad news--BondSt might be out at Thompson Beverly Hills. Instead we think a new restaurant from Thompson Hotels' Do Not Disturb restaurant group will take its place.
Check out this recentpress release:
Thompson Beverly Hills announces they will now solely operate the on site restaurant, second floor lounge and Above Beverly Hills rooftop. Acclaimed Chef Brian Redzikowski will remain, along with his signature dishes and cocktails. New additions to the menu and cuisine style will be announced soon.
The folks at Thompson have told us simply that owners of BondSt Sushi have left the project and that Thompson would now be operating it with the same chef. There's no precise mention that BondSt is out but we gather that once owners leave a project, they take their name with them too.
For now the BondSt Restaurant still lists the Beverly Hills location but we don't expect that to last much longer.

Yesterday we got an invite to check out the hotel guests-only rooftop pool and bar at Thompson Beverly Hills and since we've been waiting for this rooftop oasis since about February, we jumped at the chance to explore it.
ABH--"Above Beverly Hills"--officially opened in mid-June with a flashy party for Gucci attended by Rihanna. Since then, the rooftop--a joint partnership between Thompson Hotels and Bond Street Sushi--has been percolating with celeb guests like Britney Spears, Eva Longoria and David Beckham.
Rooftop pools have become a staple for Thompson Hotels. The A60 rooftop at 60 Thompson in Soho is a much sought-after venue for hotel guests and special card-carrying members. Donovan House in DC just opened their ADC rooftop over Memorial Weekend. And the upcoming Thompson LES and Thompson Toronto will feature rooftops areas as well.
So what's a Thompson rooftop like?
