How to Make Every Day National Tequila Day, Thanks to the Las Ventanas Resort in Cabo

Today is National Tequila Day, one of our personal favorite holidays of the year--after National Margarita Day of course.

While many of you might be celebrating with some shots of Patron at a bar after work, down at the Las Ventanas Al Paraiso Resort, a Rosewood Resort in Los Cabos, Mexico, it's an all-out affair. Never mind that the National Tequila Day holiday only applies to the U.S.

Here's what Las Ventanas has on offer for those love the tequila:

Chocolate Covered Tequila Ice Cream
Margarita Popsicles
Tequila Sunrise Popsicles

But only mentioning these tequila specialties and posting pics of them would just be cruel. And we're not like that. Neither is Las Ventanas. The resort has graciously shared the recipe for each tequila treat below so every day can be tequila day. Salud!

Chocolate Coated Tequila Ice Cream
Ingredients:
· Tequila Ice cream (see recipe below)
· 1 (12oz) package semisweet chocolate chips
· 1/2 cup vegetable or mild olive oil

Method:
· Shape tequila ice cream into balls using an ice cream scoop. Place balls on a silver foil-lined tray and put back in the freezer.
· Melt the chocolate in microwave or double-boiler. Don't overheat the chocolate. Let cool without allowing the chocolate to harden.
· Dip the ice cream balls in the melted chocolate and gently turn using a teaspoon. Place chocolate-coated ice cream balls back on silver foil and return to the freezer.

Margarita Popsicles
Ingredients
· 3/4 cup sugar
· 3/4 cup fresh lime juice
· 1/2 cup water
· 2 tablespoons fresh lemon juice
· 2 tablespoons fresh orange juice
· 2 tablespoons tequila Clase Azul
· 2 tablespoons Grand Marnier
· salt

Tools:
· 4 small cups
· 4 popsicle sticks

Method:
· Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Stir until sugar dissolves.
· Remove from heat and allow cooling. Once cool, transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth.
· Pour into the cups and cover the top of each cup with slice of lime. Place the popsicle stick in center of cup.
· Freeze, preferably overnight. Remove from freezer and run cup under warm water to loosen popsicle. Slightly dip in salt and serve.

Tequila Sunrise Popsicles
Ingredients
· 2 tablespoons lime juice
· 2 teaspoons Grenadine
· 1 1/2 cups orange juice
· 1/4 cup tequila Don Julio 70

Tools:
· 4 small cups
· 4 popsicle sticks

Method:
· In a measuring cup combine grenadine and lime juice. Using 4 plastic frozen pop molds, pour 4 teaspoons of the juice mixture into the bottom of each. Freeze for 1 hour or until get firm.
· In another cup combine orange juice and tequila. Carefully pour orange juice mixture over grenadine
· Cover paper cups with foil and insert sticks into cups, freeze overnight.

Tequila Ice Cream
Ingredients:
· 8 cups whole milk
· 2 3/4 cups whipping cream
· 2 cups sugar
· 1 cup simple syrup
· 1 cup powdered milk
· 5 fl oz tequila Casa Dragones Blanco

Method:
· Boil milk and cream. Remove from heat and mix in the remaining ingredients. Let it cool.
· Pour into the ice cream maker canister and freeze according the directions of the machine.
