Start with the resort's famed Prickly Pear Margarita ($12) while you peruse Executive Chef David Schmidt's menu. Signature starters like Lobster Bisque made with Sweet Corn Panna Cotta, Mushrooms and Cognac ($14) for a first course will tempt and for a main, let's just say Chef David is known for his Elk Loin with Fava Bean Hash, Pancetta, Pecorino and Spinach Puree ($40). But there are many choices, just remember to save room for dessert which is always a sweet surprise as offerings change.
