· Hilton San Diego Bayfront
Of course green San Diego has a vegan menu. The new menu is available at the hotel's Vela, Odysea, Baybreeze Pool Bar as well as through room service. It features dishes that might even tempt meat-eaters, like crispy polenta with sweet-smoky tomato compote and spiced Marcona almonds; stuffed poppadom with cilantro, potatoes, pine nuts and cashew chutney; and a Magic Chocolate Cake.
· Wynn and Encore
These two hotels are making Vegas vegan by offering a special dishes at every fine dining and casual restaurant. You'll find fava bean puree with sauteed hon shimeji mushrooms, snap pea salad and aged balsamic vinegar at Alex; a vegan crunch roll with crispy asparagus, avocado, cucumber and arare at Wazuzu; and banana crepes with coconut ice cream and avocado mousse at Switch.
· Beverly Wilshire
Wolfgang Puck's Cut at the Beverly Wilshire is a meat mecca. But don't let that deter your meat-free self. Not many people know that the steakhouse has a secret vegan menu. You won't find it online or even printed on the restaurant's own menu. You have to ask for it by name at Cut.
