Which Hotel Chef Is Making Jelly Doughnut Pancakes?

Few things excite us more than a delicious hotel breakfast. Sometimes, we wish we could just spend the whole day inside a swanky brasserie, gazing out the window, eating omelets and sipping tea. Chef Franklin Becker's new joint Lexington Brass, located inside Hyatt 48Lex, might be just the place for it.

The menu's winning item, no doubt, are the jelly doughnut pancakes, which borrow the concept of a baked, jelly-filled doughnut and impose it onto a regular old pancake. The result is thick, fluffy, jelly-filled and awesome. You might call it a dough-cake. Either way, it's served with berries and lemon cream, costs $17, and is the most delicious-sounding breakfast we've ever encountered.

The ground-floor restaurant, which looks onto Lexington Avenue, is decked out in glazed brick tiles, a marble bar, floor-to-ceiling windows, and plenty of mirrors. A hotel breakfast fiend's dream.

Becker previously ran the kitchens at Tribeca and Soho Grand, and is seemingly enamored of his new space, noting its "inviting, beautiful ambiance" and aim to become "a neighborhood place." He explained:

"When we were first approached by Hyatt to become a third-party partner, we were analyzing what concept to put [in] here, and we were seeing a void in neighborhood. There was no neighborhood place that was sophisticated enough for a business man, but causal enough for locals to pop in and grab a salad or a burger or a late-night snack.

We wanted to fill that void."

Other mouth-watering breakfast items here include: Brass Ale Beer Waffles (served with bananas and cinnamon butter, $15), Spanish Scramble (with chorizo and rock shrimp, $18), and a Banana-Chai smoothie ($9).

For a regular old dinner, though, Becker has a few recommendations of his own. Try the Buttermilk Fried Chicken ($23), the Deviled Eggs (with caviar, $11) or the Pan-roasted Scottish Salmon (with lentils and sherry-shallot vinaigrette, $27).
