Sam Talbot revealed his plans to use "fresh, seasonal, sustainable seafood" at his restaurant at Soho's Mondrian Hotel, which will open in September. Much of it will come from the Montauk fishermen he met during his tenure at the Surf Lodge, where he was churning out fried Montauk calamari and lobster salad sandwiches.
