The new menu includes locally sourced ingredients featuring Hamakua Alii Mushroom Flat Bread with Maui onion and cheese, and Crab and Asparagus Sushi rolled in sesame wraps with Tobiko Caviar and Kaiware Sprouts.
The Fairmont Artistic Mixology Experience (FAME), a program that works with cocktail guru Ryan Magarian to step up the hotelier’s cocktail standards, ensures the freshest local ingredients and juices are used in all beverages including guest favorite, the Pomegranate and Cucumber Mojito. In addition to tasty tidbits, high-octane cocktails and a laid-back vibe, guests are treated to nightly entertainment from local musicians as they relax and canoodle on the private cabana-esque canopy couches.
