The May Fair Mojito
3 - 4 Sprigs of mint leaves
1.5 oz. Havana Club Rum (3-year)
.5 oz. Havana Club Rum (7-year)
6 tsp. Castor sugar (infused with secret ingredient)
2 Blackberries for garnish
1 Unwaxed lime cut into 5-6 segments
Crushed ice
1 Boston shaker
1 Wooden muddler
1 Glass (roughly 10oz.)
Create Mojito in glass part of the Boston shaker. Start by adding three segments of lime to glass, followed by one sprig of mint. Add three teaspoons of castor sugar. Repeat the above again.
Use muddler to muddle items in glass until a liquid consistency is formed.
Top up with crushed ice. Add Havana Club 3-year. Follow then with Havana Club 7-year.
Shake!
Pour into Mojito glass. Top off with crushed ice. Garnish with sprig of mint, blackberries and a sprinkle of castor sugar.
