Charlie Trotter Trots Out of Elysian Chicago Deal

The Elysian Chicago, a 60-story hotel/condo development going up near Michigan Avenue, is supposed to be finishing up construction in the next few months (er, or whatever "Spring 2009" means in hotel development jargon). A "throwback to the grand hotels of the 1920's," the property's still fairly-bare website is still promoting big-name chef Charlie Trotter as one of its biggest assets:

Five-star chef Charlie Trotter is overseeing all the restaurants, including an all-day dining destination and a more elegant fine dining room. In addition, Chef Trotter supervises all of the 'round the clock in-residence dining service at the Elysian.

However, we're hearing today that Trotter — who also has a resto in the Palazzo Las Vegas — has pulled out of the deal.

In what the Chicago Tribune reports to be an "amicable split," the chef has parted ways with the project (and was unavailable for statement because he was busy traveling around Germany's wine region; how nice) and a new replacement was expected to be named soon.

Hey, Elysian people: might we suggest the placing a call to the newest Top Chef? It's worth a shot, right? Just don't replace Trotter with Gordon Ramsay, please.
