As we said yesterday, rooftop pools and bars are all the rage in Seville at the moment.

But nice as the others can be, there’s one place that stands head and shoulders (or maybe that should be a couple of floors) above the others – the Santo Terraza Bar at the EME Hotel on Calle Alemanes.

For a start, the position is unbeatable – it’s in the cathedral square, facing the Giralda and the north side of the cathedral, with all its balustrades and flying buttresses and other architectural delights.

And they’ve really made the most of it, singling the hotel out from the touristy bars and shops dotted around it, by laying out a red carpet to its entrance.

The bar is on the fourth floor (or fifth, in American-speak) – to get there, you go up in a lift so trendy that it whiles away your journey by giving you random facts to amaze/irritate your companions with.

On the fourth floor, you walk out over a funky kind of drawbridge hanging over an internal patio down on the ground floor, past the bar where they’re cooking up mojitos (€12), and up another flight of steps to the terrace where there’s a smaller bar and stools all pointing at the cathedral.

Up another flight of stairs, behind the bar, is a restaurant (although it’s heinously priced) and a pool, albeit a small one, where the sun loungers point at the Giralda and have "Be Fabulous" printed on them. Nice.

The views here speak for themselves. And the prices at the bar, at least, aren’t too bad – those pricey mojitos seemed to be the drink of choice both times we were there, but a glass of wine costs a much more reasonable €4.

It’s open till 1am, so although the touristy thing to do used to be to watch the sunset from the rooftop at the Dona Maria, it’s much more fun to come here in the night time and watch the owls and the bats swirling round the Giralda.

Luckily for you, most of the tourists are still hanging out at the Dona Maria, so the mix here is predominantly Spanish and very laid back. Catch it while you can.
