If you want to wake up in a comfortable bed, hit Bondi for a surf and return for breakfast with no commute, then the Swiss Grand is your hotel. But beyond that, don't get your expectations too high.
Depending on which source you believe, it's anywhere between a three-and-a-half and a four-and-a-half star hotel, and the decor and furnishings are really quite plain. If you don't get a beach-view room, you might get stuck in a relatively dingy spot, so do pay the extra. The buffet breakfast is usually pretty tasty though, and you can eat up heartily if you've already been exercising on the beach.
To get into Sydney's downtown it's about twenty minutes or so on the bus, so weigh up where you plan to spend more of your time.
