From Chef to Hotelier: Charlie Palmer Plans Las Vegas Boutique Hotel

Word on the street is that chef Charlie Palmer, famous for his steakhouses, is opening a 400-room boutique hotel in downtown Las Vegas at the upcoming Union Park development. Here's what the official description of the Charlie Palmer Hotel from the website says:

Anticipated home to over 400 elegantly appointed and spacious suites and rooms, the hotel’s 10,000 square-foot-spa combines recreational fitness and restorative wellness amenities and opens onto a Hollywood-style pool surrounded by tented cabanas with alfresco dining available from an indoor/outdoor breakfast/lunch/dinner bistro. A top floor Charlie Palmer fine dining restaurant features a sky terrace that overlooks Symphony Park and The Smith Center for the Performing Arts.

Another report said there will be three Charlie Palmer restaurants in total, including a sushi bar--a first for Charlie Palmer. But sadly (or maybe fortunately?), the hotel won't have any gaming.

However, it turns out Charlie is already a hotelier having opened the Hotel Healdsburg in Northern Sonoma County. He's also got the Vegas territory down pat since he has two restaurants on the strip--Aureole at Mandalay Bay and Charlie Palmer Steakhouse in the Four Seasons Hotel. We don't have an opening date but if his hotel is as good as his Wagyu Beef Hot dog, then we will be repeat guests.
