And although the hotel remains planted on the classics list, its bar provides an "it" element for the times. Their Crystal Cosmo is so "it" that it has found the likes of Jack Nicholson. So what's in this heavenly drink?

Speciality of the chic leather-floored Bar Seine, where you might just catch Jack Nicholson discussing life and art. Mix 59.15ml Absolut Citron, 14.79ml Cointreau and 29.57ml white cranberry juice in an ice-filled cocktail shaker (exact measurements are crucial in a city where mixologists are the new style tsars), cover and shake thoroughly, strain into chilled cocktail glass and garnish with a lime wedge. After three Crystal Cosmos, ask Jack who the much younger blonde is.

Et voila. A nouveau cocktail du jour adds a little va-voom to a hotel that will always be a New York classic.
