Marriott San Francisco Turns Trash into Wine

If you've got an incredibly talented palette, the next time you drink a California wine look for hints of Marriott San Francisco Hotel food waste. It sounds absurd and disgusting but in reality the hotel sends anything that is compostable, so all paper goods and food scraps, to be recycled back into the earth:

Once hauled away by Golden Gate Recycling, the waste is taken to an organic composting facility where it is ground up, heated and converted to nutrient-rich mulch. Many vineyards in Napa Valley then use that mulch to help grow grapes.

It's not just the wine industry that is benefiting by the Marriott's efforts. In 2005 the hotel saved 750,000 pounds of compostable material from heading to overflowing landfills. Instead it was sent off for earth recycling. This is just short of their goal of a million pounds per year. With 1,498 rooms filled with waste-loving guests, the goal should be met soon.

Since the San Francisco Marriott started their earth friendly movement, many others are following. This is good news for the earth but leaves a somewhat stale tannin in the mouths of wine lovers everywhere.
